It was such an honour to co-host and style a special dinner for Parmigiano Reggiano with Sophie Rushton-Smith of The Corner Plot. For table styling, the cheese was the centrepiece with a few seasonal February flowers and pops of indigo blue to echo the striking art of the restaurant.

It was the menu that took centre stage. Da Terra's Chef Rafael Cagali is renowned for inventive menus that bring together his Brazilian and Italian heritage. Parmigiano Reggiano took centre stage, with its flavours building across each course, showcasing its varying ages:
Panzanella salad with 48 months Parmigiano Reggiano
Sourdough bread and 48 month Parmigiano Reggiano foam
___
Chalk stream trout and tomato vodka sauce with 24 month Parmigiano Reggiano
____
Duck leg tortellini, consommé, pickled king oyster
____
Angus sirloin, morel, 18 month Parmigiano Reggiano sauce
____
Blood orange yoghurt
Petit fours
My co-host Sophie and fellow ambassador Gennaro Contaldo are passionate about the tradition, complex flavours and craft of this iconic cheese from a small area in northern Italy.

Rafael’s creativity showed me how championing one hero ingredient is such an exciting way to approach a dinner party menu. I can’t wait to try it myself this spring!
